Charred and Tender grilled chicken spiced with a special blend of homemade taco seasoning can be grilled or cooked on the stove-top. It’s seasoned with my favorite blend of homemade taco seasoning. With the addition of garlic, lime, and olive oil, you’ve got yourself delicious chicken that’s great for tacos, burrito bowls, salads, wraps and just about anything else.

A batch of perfectly grilled chicken can go a long way. I like to season a few pounds of boneless and skinless chicken thighs or breasts and keep them in zip seal bags in the fridge and freezer. When needed, just pop a bag out of the fridge or freezer and grill on an outdoor grill or right in a pan on the stove top. Use it to make tacos, wraps, on a salad or rice.

Just like Chipotle, I like to use boneless skinless chicken thighs rather than breasts because they are always tender and won’t dry out. Chicken breasts will also work for this recipe but be sure not to over-cook them. The Best Grilled Chicken ( for Tacos, Burritos, or Salads)

MY LATEST RECIPES

  • 1 pound Boneless, Skinless chicken thighs or breasts we prefer thighs
  • 2 cloves garlic minced
  • 1 tablespoon lime juice optional
  • 1 tablespoon olive oil
  • 1 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon black pepper
  • 1 teaspoon corn starch optional
  1. Add the chicken, garlic, olive oil, lime, spices, and cornstarch to a large bowl or zip-seal bag.

  2. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours. 

  3. Remove chicken from marinade and discard marinade. Place chicken on a grill or pan heated to medium-high heat. Let chicken cook until it is no longer pink on the inside, about 6-7 minutes per side  (or until it has reached an internal temperature of 165 degrees F). 

  4. Serve chicken in tacos, burritos, on salads or rice.

Dry Rub for Chicken

Whether you love making your own homemade dry rub for chicken or using a pre-made mix, spices are an excellent way to season your chicken breasts! I always keep a number of pre-made mixes on hand for last minute usage.

My favorite Dry Rub for Chicken

  • Tuscan Sunset
  • Peppercorn Ranch
  • Lemon Pepper
  • All-Purpose

Grilled Chicken 

When in doubt, BBQ! That’s my motto when it comes to chicken breasts. If you’ve got yourself some delicious chicken and you can’t figure out what to do with them, throw em on the grill. Girls- don’t be afraid! Grilling is actually so much easier than you might think. Plus, those grill marks, though.

What I like to do is grill 4 or 5 chicken breasts at once so that I can have a protein salad topper all week! If I don’t want to use them on top of a salad, I’ll make one of my infamous superfood bowls like this one or this one.

Chicken breasts are my go-to protein when it comes to meat. I love that chicken breasts are lower in calories and high in protein, the perfect thing after a tough workout!

Ingredients

  • 1 4 oz chicken breast
  • salt and pepper to taste

Instructions

  1. Heat a medium skillet over medium heat. Add olive oil.
  2. Season chicken breast with salt and pepper. Set aside.
  3. When olive oil is fragrant, add chicken breast to skillet and cover. Cook for -3-5 minutes on each side. Remove from heat.
  4. Check the internal temperature of the chicken breast is 165ºF. Enjoy!

How to bake chicken breast in the oven Keyword: brining, chicken breast, easy, how to cook chicken breast

  • 2 chicken breasts (boneless & skinless)
  • 1 tbsp. salt
  • Water
  • Seasoning (i like curry powder and paprika)
  1. Cut away any visible fat and bones. I always use a pair of scissors for this as it’s much easier than using a knife.

  2. Fill a large bowl with just enough water to cover the chicken breasts and add ½ tbsp. of salt for each chicken breast. Let the salt dissolve before adding the chicken breasts.

  3. Leave the chicken breasts to marinate in the salt water for 1-3 hours in the fridge. This will draw water into the chicken and make it super moist when you cook it (this process is called “brining”).

  4. Rinse the chicken breasts thoroughly in cold water. Dry them with a paper towel and put them on a baking pan.

  5. Add your favorite seasoning. I usually use pepper, curry powder, paprika and garlic powder, but you can use a wide variety of spices.

  6. Cook the chicken breasts in the oven for about 18-20 minutes at a 365 F (185 C), depending on the size of the chicken breasts. Cut into one with a knife to see if they are done before taking them out of the oven.

  7. Let the chicken breasts rest for 2-3 minutes after you take them out of the oven to lock in all the juices.
