Did you know that you can actually MICROWAVE Rice Krispie Treats? Well, let me tell you a little secret. Not only can you make them in the microwave, they actually taste BETTER than making them over the stove. They will never get hard and dry. This version of microwave Rice Krispie treats is totally foolproof. They turn out soft and chewy every time.

Some may wonder why their Rice Krispie treats turn out hard. The answer is in how the marshmallows are cooked. When you make Rice Krispie treats over the stove, the marshmallows have a tendency to get too HOT. If the marshmallows cook too long and get too hot and overdone, you will have hard Rice Krispie treats. That is why microwaving them is the better way to go. Just be sure not to OVER microwave them, which you won’t if you trust me and follow this recipe.
With some newly discovered gluten allergies in our family, we are always trying to be aware of gluten-free foods. If you are wondering if Rice Krispie treats are gluten-free, it depends on the brand of cereal. There is barley present in Kellogg’s Rice Krispies, which contains gluten. Years ago there was a gluten free Kellogg’s Rice Krispies cereal but it has since been discontinued. You can find generic brands of “crispy rice cereal” that are gluten-free. Malt-O-Meal is a brand that makes a gluten-free crispy rice cereal, and it works great in this recipe.
Many also want to know if coconut oil can be used instead of butter. The answer is YES, and it is a delicious substitution! Just use the same amount of coconut oil as you would butter. That’s it. So tasty! We actually make this substitution often and include coconut flakes and chocolate chips.
Rice Krispie Treat Add-Ins
This is a no-frills, basic recipe, but feel free to add anything you would like to them including M&Ms, chocolate chips, coconut, crushed Oreos, candy corn (for Halloween), Cadbury mini eggs (for Easter), candy sprinkles, etc.

Store your microwave Rice Krispie treats in an air-tight container and place wax paper in between each layer to prevent them from sticking together. These do not need to be refrigerated, but it doesn’t hurt them if they are.This recipe comes from my friend, Heidi P., whom I begged for the recipe. Making vegan rice krispie treats is too easy
You start off by melting some vegan butter, then you add the marshmallows and stir, stir, stir. They start melting immediately.
Keep stirring until the marshmallows have melted completely, then add some vanilla and stir in. Remove from the heat. Add a heap of rice krispies, stir them in until they’re all coated with the melted marshmallow mix and then transfer to a quarter sheet pan (mine is a 9×13) that has been sprayed with non-stick spray.
Take a sheet of parchment paper and put it on top of the rice krispies and use your hands to smooth and flatten it down and spread it into the corners of the sheet pan. The parchment paper is perfectly non-stick so your hands are protected from sticking to the rice krispies and it’s super easy to press down on it and smooth it down perfectly.
I have seen some people butter their hands and use their hands directly (the rice krispies are super sticky) but the parchment paper method worked sooo well that I highly recommend you do it that way.

Fabulously crispy vegan rice krispie treats made with vegan marshmallows! Perfectly sweet and simple 4-ingredient recipe. Ready in 10 minutes!
- 1/4 cup (56g) Vegan Butter
- 10.5oz (300g) Vegan Marshmallows
- 1/2 tsp Vanilla Extract
- 6 cups (210g) Rice Krispies*
- Spray a 9×13 quarter sheet baking tray with non-stick spray and set aside.
- Melt the butter in a pot and then add the marshmallows.
- Stir vigorously until the marshmallows are completely melted and then add the vanilla.
- Remove from heat and add in the rice krispies and stir until coated with the marshmallow mix.
- Transfer to the prepared quarter sheet pan. Place a sheet of parchment paper over the top and use your hands to press it down and spread the rice krispies into the corners of the sheet pan and flatten it along the top.
- Remove the parchment paper and place the tray into the fridge for a few minutes to set.
- Cut into squares.
- Keep the rice krispie treats in the fridge in an airtight container and enjoy within 3 days.
*The brand name Rice Krispies are not gluten-free, but if you need this recipe to be gluten-free you can use a different puffed rice cereal that is gluten-free.
