With a generous amount of acidity from apple cider vinegar and Dijon mustard, our favorite coleslaw is anything but dull. Instead, our coleslaw recipe is packed with fresh, lively flavors that wake up anything you serve with it. Try this as a topping to sandwiches, served next to ultra-savory meats, like braised beef or pork. Or, mound some on top of your next hot dog or hamburger.

Cole Slaw Easy Cole Slaw (Coleslaw) Recipe

Cole Slaw is the quintessential side dish for the summer. We love it so much we already have two versions on the site! Both are copycats, one is KFC Coleslaw (Copycat) and the second is my personal favorite unique cole slaw, Tony Roma’s Coleslaw with celery seeds.

Cole Slaw is a classic summer side dish best served with BBQ Pulled Chicken, BBQ Chicken, Barbecue Ribs or any other summer favorites you love including corn on the cob and Potato Salad.

Why buy pre-shredded cole slaw mix? For us the time involved in chopping plus the leftovers of the cabbage make it an easy swap. In addition to that, for some reason we find buying the vegetables whole costs almost twice as much as buying the pre-shredded bag. For us in the summer we love to keep things easy. This recipe shouldn’t take you more than a few minutes to put together the morning of your bbq.

Important Note about Cole Slaw: YES, this recipe takes about five minutes, but one of the most important things about Cole Slaw is letting it sit, so that the dressing can soften the crunch of the cabbage. We give it at least 2 hours. Even better if you can do it the night before.

This Cole Slaw recipe is your classic cole slaw. Think going to the grocery store, about to spend four dollars a pound on cole slaw, cole slaw. Instead of spending so much, you can make it at home and with ingredients you can control.

I’ve actually spoken to heads of deli departments who have told me that cole slaw comes in either pre-made or in two parts, mix and dressing. This is a way to have fresh cole slaw without the added preservatives you’ll find in packaged cole slaw dressings.

So why post a third cole slaw recipe on the same site? Well, it’s the CLASSIC summer side dish and I love options. So choose your favorite version.

Easy ColeSlaw Recipes:

  • KFC Cole Slaw: Made with milk, buttermilk, lemon juice chopped cabbage, onion and carrots, this is the perfect KFC copycat. It has a bit of a bite from the onions.
  • Tony Roma’s Cole Slaw: This recipe is the perfect higher end recipe with celery seeds and a bit less creamy texture. If you’re serving up a summer dinner menu, you can go a bit fancier with this version.
  • Easy Cole Slaw: This recipe, this is the standard classic version made to take the place of buying pre-made.

  • 14 ounce coleslaw mix with red cabbage and carrots*
  • 1/2 cup mayonnaise
  • 2 tablespoons white sugar
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon white vinegar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

  1. Add the mayonnaise, sugar, lemon juice, white vinegar, salt and pepper to a large mixing bowl and whisk together until fully combined.
  2. Add in the coleslaw mix and stir well to combine.
  3. Refrigerate for at least 2 hours before serving.

* If you want to uses your own mix for the coleslaw, I use 8 cups shredded cabbage, 1 cup shredded red cabbage, and 4 julienned carrots.

    Quarter the cabbage through the core, and then cut out the core. Cut each quarter crosswise in half and finely shred. Place the shredded cabbage in a very large bowl (you will have a 6 to 8 cups). Add the shredded carrot and parsley to the cabbage and toss to mix.

    In a separate bowl, stir the mayonnaise, vinegar, mustard, celery seeds, salt, and pepper together. Taste for acidity and seasoning then adjust as desired.

    Pour two-thirds of the dressing over the cabbage and carrot then mix well. (Clean hands are the quickest tool). If the coleslaw seems dry, add a little more of the dressing. Eat right away or let it sit in the refrigerator for about an hour to let the flavors mingle and the cabbage to soften.

  • Cabbage: Use green cabbage, red cabbage, savoy cabbage or Napa cabbage. For a multi-colored or multi-textured coleslaw, use a combination of two varieties.
  • Store-bought bagged coleslaw mix: You can buy bags of pre-shredded cabbage or coleslaw mix. They usually range between 10 and 16 ounces. Simply replace the cabbage and carrot called for in our recipe above with your favorite store-bought bag.
  • Make ahead: The vegetables can be shredded a day or two in advance and kept in a resealable bag in the refrigerator. As for the dressing, mix it up and store covered in the refrigerator for weeks. Combine the cabbage, carrots and dressing the night before or day of serving — we like the crunch of the vegetables to still be present. The longer the cabbage sits in the coleslaw dressing, the softer it will become.
  • Leftover dressing: This can be used as a spread for sandwiches, dip for vegetables, served alongside the coleslaw or with grilled or roasted vegetables, chicken or meats.

Easiest Coleslaw Recipe!

This coleslaw recipe is one of those back pocket recipes, especially during the summer with all the cookouts. It’s the perfect last minute side and goes perfectly with grilled meats or sandwiches like pulled pork/chicken sandwiches or french dip.

This coleslaw dressing is only needs 3 ingredients! Then if you want more flavor on top of that you can add in things like a little celery seed or dijon mustard but I prefer it as is.

  • Shredded coleslaw mix
  • Good quality mayonnaise
  • Apple cider vinegar
  • Honey

What Should I Serve with It?

Coleslaw goes well with just about anything (ribs, chicken, pulled pork, etc). For an easy dinner try pulled chicken sandwiches! This is how I make them:

  • Add a few chicken breasts to a slow cooker
  • Add in about 1/4 cup chicken broth
  • Season chicken with salt pepper garlic powder and onion powder
  • Cook on low until cooked through (about 4 1/2 – 5 hours)
  • Drain, shred then mix in some of your favorite bbq sauce to coat.
  • Serve in fresh bakery hamburger buns.

  • 1 (14 oz.) pkg. coleslaw mix
  • 1/2 cup good quality mayonnaise
  • 1 1/2 Tbsp honey (or granulated sugar)
  • 1 1/2 Tbsp apple cider vinegar
  • Salt (optional, to taste)

  1. In a small mixing bowl whisk together mayonnaise honey, apple cider vinegar and a pinch or two of salt if needed.

How to Make Coleslaw

We have homemade coleslaw at least once a week, usually with fish, and often with burgers or hot dogs. This coleslaw recipe (our way of preparing it) is ridiculously easy with cabbage, carrot, and onions gently mixed and coated with mayonnaise, a dab of yellow mustard (which by the way is just Dijon mustard with some added turmeric), vinegar, and black pepper.

Coleslaw Recipe Modifications

We also often make this coleslaw recipe without mayonnaise. Sometimes we dress it simply with seasoned rice vinegar. Sometimes we add some shredded green apple to the mix. You can easily adjust these coleslaw ingredients for your taste. (See links at the bottom of the recipe for more coleslaw ideas.)

If you are making a lot of coleslaw, it's easiest to use a mandoline to slice the cabbage.

However you slice the cabbage, you'll have an easier time of it if you cut the head first in quarters, from the top through the core. Then lay a quarter wedge of cabbage on its side and cut out the core.

  • 4 cups thinly sliced cabbage (green or purple, or a mix)
  • 1 carrot, grated (large holes of a box grater)
  • 2 green onions, thinly sliced on the diagonal
  • 4 Tbsp mayonnaise
  • 1 teaspoon yellow mustard
  • 2 teaspoons cider vinegar or wine vinegar
  • 1/8 teaspoon freshly ground black pepper (more to taste)

Place the cabbage, carrot, and onions in a large bowl. Add the dressing ingredients and gently mix so that all of the shredded cabbage is coated with the dressing.

Taste and add more salt and pepper if needed.

Serve immediately.

  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 2 to 3 tablespoons white wine vinegar
  • salt and pepper (to taste)
  • 4 cups thinly sliced cabbage (use fresh green cabbage or a mix of green and purple cabbage)
  • 1 1/2 cups shredded carrots
  • 1 thinly sliced red onion
  • sliced green onions for garnish (optional)
  1. Add the mayonnaise, honey, mustard, vinegar and salt and pepper to a mason jar and shake until smooth. Set aside.

  2. Add the shredded cabbage, shredded carrots and red onion to a large bowl.

  3. Pour the dressing over the cabbage mixture and toss well until full coated in the dressing.

  4. Garnish with sliced green onion and serve.

Store in the fridge for up to one day ahead of serving, if desired.
